Carrot Ginger Soup With An Apple Twist

Ingredients

4 medium carrots, peeled and roughly chopped

2 small potatoes, peeled and roughly chopped

½ cup celery, chopped

2 red apples, peeled and roughly chopped

1 tablespoon fresh ginger, grated

1 shallot, roughly chopped

4 cups chicken or vegetable stock


*Blender or hand blender required

Method

1. Place all ingredients in a pot and sauté with a touch of olive oil for 8 - 10 minutes. Pour in stock.

2. Boil then simmer for 30 minutes. With a blender or a hand blender purée to your liking.

3. Serve with a dollop of crème fresh or Greek yogurt and crack black pepper over each serving.

Take note! This recipe doesn't require any spices.
