There’s some truth in the old wisdom that carrots are good for your eyes. Carrots are rich in beta-carotene which is converted into Vitamin A in the liver. Vitamin A is transformed in the retina, to rhodopsin, a purple pigment necessary for night vision.
2 cups sifted all-purpose flour
½ cup good quality natural cane sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger powder
3 cups grated carrots, approximately 5 carrots
1 cup grated fresh pineapple
1 cup vegetable oil
¼ cup runny honey
1 teaspoon vanilla
1. Pre-heat oven to 170 degrees Celsius
2. Mix all dry ingredients in a bowl and wet ingredients in another bowl; then blend both mixtures together.
3. Brush butter in a muffin pan and fill each cup to ¾ full with the mixture and bake for 20-25 minutes depending on your oven. To know when ready, stick a toothpick in center of one muffin. If it comes out dry, then it is ready.
