Chilling Out With Peas
If you love peas, then this is the right soup for you. It's so delicious, you will want more than one spoonful at a time. The texture is thick and creamy, and the flavor is rich along with a refreshing temperature.  What more do you need?

Peas are low fat but high everything else. A cup of peas has less than 100 calories but lots of protein, fiber and micronutrients.

Ingredients

2 cups fresh green peas, peeled and ready to use.  If not available frozen good quality green peas are fine.

1/2 cup leeks, chopped

1 ½ cup russet or golden potato, peeled and chopped 

2 cups chicken broth

1 tablespoon fresh lemon zest, grated

1 cup low fat milk

¾ teaspoon salt

¼ teaspoon fresh ground pepper

Juice of half a fresh lemon 

 
Sauce for the garnish:

1 cup low fat yogurt

2 tablespoons fresh mint, finely minced

1 tablespoon fresh green onion, bottom portion, finely minced

¼ teaspoon salt

Freshly grated pepper

Method
  1. In a large pot, drizzle some olive oil over medium to high heat. Add peas, leeks, and potato for 4 minutes. Add water, chicken broth, and lemon zest. Bring to a boil then simmer for approximately 20 minutes so everything becomes tender.
  2. Place contents in a blender carefully and puree or use a hand blender.
  3. Place purée mixture in a large serving bowl. Add milk, lemon juice, salt and pepper to the mixture and stir well. Place in refrigerator for at least one hour. Add salt as you please.
  4. While pea soup is cooling, combine 1 cup of low fat plain yogurt with mint and green onion and mix well then transfer to a small serving bowl. Place in refrigerator to cool with pea soup. 
  5. When it is time to serve, enjoy this soup with a dollop of the yogurt sauce on the surface of each bowl.
Take note! This recipe doesn't require any spices.
