Ingredients

500 grams, good quality salmon

2 heads of baby gem lettuce, discard ends, cleaned and chopped

1 small fennel bottom bulb, approximately 100 gram, center root discarded, shredded with larger holed cheese grater

2 tablespoons fresh dill weed, finely chopped

1 teaspoon mandarin zest

2 small seedless mandarins, peeled and separated into pieces

1 tablespoon white balsamic vinegar

½ lemon, squeezed

1 tablespoon good quality whole grain mustard 

Method

1.    Remove salmon from packaging and chop  

2.    In a medium bowl, combine chopped smoked salmon with baby gem lettuce, fennel, dill

3.    Zest half the mandarin and blend with contents in the bowl

4.    Peel and add pieces of mandarin

5.    Pour white vinegar and lemon juice over the salmon mix and gently mix

6.    Add the wholegrain mustard and mix well
