½ cup good quality cane sugar
½ cup runny honey
1 teaspoon vanilla
Inside of 1 vanilla pod (optional)
½ cup good quality vegetable oil
2 ripe bananas mashed
2 tablespoons plain yogurt
1 ½ cup sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon ginger powder
½ teaspoon cinnamon
Pinch of salt
1. Beat the egg with sugar, honey, vanilla, and oil.
2. Add bananas and yogurt until fluffy. In another bowl, combine flour, baking soda, ginger, and cinnamon powder. Combine both mixtures in an electric mixer or whisk vigorously.
3. Place ingredients in a buttered baking pan and heat for 40 minutes at 180 degrees Celsius. Use a Bundt pan for great presentation.
4. Allow cooling for at least 20 minutes before serving. Flip over onto your serving platter. Garnish with fresh bananas.
