Going Bananas Cake
I have made this recipe many times and it is wonderful. Frost with a homemade caramel frosting for "out of this world" bites.

Creamy bananas mix well with other fruits and are a favorite lunchtime addition or for noshing on the go.

Ingredients

1 egg

½ cup good quality cane sugar

½ cup runny honey

1 teaspoon vanilla

Inside of 1 vanilla pod (optional)

½ cup good quality vegetable oil

2 ripe bananas mashed

2 tablespoons plain yogurt

1 ½ cup sifted all-purpose flour

1 teaspoon baking soda

1 teaspoon ginger powder

½ teaspoon cinnamon

Pinch of salt 

Method

1. Beat the egg with sugar, honey, vanilla, and oil.

2. Add bananas and yogurt until fluffy.  In another bowl, combine flour, baking soda, ginger, and cinnamon powder. Combine both mixtures in an electric mixer or whisk vigorously.

3. Place ingredients in a buttered baking pan and heat for 40 minutes at 180 degrees Celsius. Use a Bundt pan for great presentation.

4. Allow cooling for at least 20 minutes before serving. Flip over onto your serving platter. Garnish with fresh bananas.

Take note! This recipe doesn't require any spices.
