A chunky fresh salad, quick to make and packed with protein. The wholemeal pitta makes a high-fibre accompaniement.

Ingredients

For the salad:

1 medium head romaine lettuce, chopped, discard bottom white part

1 large cucumber, peeled, seeded and chopped

1 small red onion, thinly sliced

¾ cup deseeded Kalamata black olives, thoroughly rinsed and drained

1 small green bell capsicum, chopped

1 tablespoon fresh basil, chopped

1 tablespoon fresh grated lemon zest

¾ cup crumbled feta cheese


For the dressing:

¾ cup extra-virgin olive oil

2 tablespoons dried oregano

1 teaspoon minced fresh garlic

3 tablespoons fresh lemon juice

2 tablespoons balsamic vinegar

¼ teaspoon white granulated sugar

⅛ teaspoon chili powder

¼ teaspoon freshly ground black pepper

¼ teaspoon rock salt

Method

1. Mix the dressing ingredients together in a medium bowl using a whisk, or place the ingredients in a blender to emulsify. Place the dressing in the refrigerator while preparing salad.

2. Combine salad ingredients in a large bowl. When ready to serve, toss the dressing with the salad. Or serve the salad and dressing separately.
