Beef Brisket
This dish is mostly about technique. You don't want to loose any juices during the cooking process.

Ingredients

2.5-3 Kilos good quality beef brisket cut- ask your butcher to trim large pieces of fat, keeping only small parts, and tie with cooking string to hold together

Rock salt

750 grams can good quality crushed tomatoes

½ cup tomato paste

½ cup low sodium ketchup

½ cup beef stock

2 cans Coca-Cola

2 tablespoons runny honey

¼ cup olive oil

3 tablespoons chili powder

1 tablespoon ground paprika

1 tablespoon ancho chili powder, if not available substitute with another favorite type of chili powder

1 medium red onion, sliced

10 garlic cloves, minced

¼ cup dark brown sugar

½ cup red wine vinegar

1 tablespoon Worchester sauce 

Method
1. Preheat the oven to 190 degrees Celsius.

2. Remove brisket piece from the refrigerator. Bring to room temperature. Over the stovetop, melt 1 tablespoon butter and large drizzle of olive oil in a wide, heavy-bottomed oven-safe pot with a lid.  Add meat and fry until browned/seared on all sides.  This will help seal in the juice while cooking.

3. Turn heat off and set aside.  In a large mixing bowl combine all the ingredients and mix well.  Add the mixture to the pot and cover tightly with the lid and place in oven for approximately 30 minutes.  Reduce the temperature to 160 °C.

4. Slowly cook for approximately 5 to 6 hours.  Every hour pour more of the mixture all over the brisket. 

5. When completed (you will know by poking with fork, should be completely soft/tender).  Carefully remove the meat from the sauce and place on a large platter.  Discard the cooking string and allow to cool for 20 minutes.  With 2 forks pull the meat creating a platter of shredded pieces.  Pour the sauce through a strainer if you wish to offer sauce in the side. 

6. This dish is perfect with tortillas, tacos, sour cream, salads- even on its own!
