The strawberry, a member of the rose family, is the only fruit with seeds on the outside. And on average, there are 200 seeds on each berry.
3 cups finely torn clean baby spinach leaves, thoroughly rinsed and drained
1 ½ cups fresh strawberries, cleaned, de-stemmed and thickly sliced
¼ cup raw pine nuts, lightly toasted
½ teaspoon finely grated lime zest
¼ cup extra-virgin olive oil
¼ cup honey
2 tablespoons balsamic vinegar
1 tablespoon poppy seeds
1. In a large serving bowl, toss spinach, strawberries and pine nuts together. Sprinkle lime zest over the greens and strawberries. Combine thoroughly.
2. In a medium bowl whisk together oil, honey, vinegar, and poppy seeds. Pour this over the salad and toss to coat the spinach and strawberries. Or serve the salad bare and allow each person to add their dressing, as they would like.
