It is very important to let cucumber rest or the sauce will be loose and runny!
There are strong traditional beliefs about the cognitive impact of za’atar, including its possibility of improving memory. People used to sleep with za’atar beneath their pillow, but in reality, it could be due to the circulation-boosting powers of za’atar, as well as the rich mineral content that can boost brain power and stimulate neural activity.
1 ⅓kg salmon on skin, fillet
2 lemons, sliced
½ cup of fresh zaatar leaves, chopped
½ cup green onion, chopped
Ground black pepper
Good quality olive oil
For the sauce - mix ingredients together:
1 cup fat-free sour cream
3 cucumbers, skinned and shredded
½ cup fresh Zaatar, chopped
1 tablespoon green onion, bottom white portion finely chopped
1. Preheat the oven to 180 °C/355°F.
2. On a large non-stick baking sheet, gently lay the salmon skin down. In a horizontal line, carefully place sliced lemons over salmon. Sprinkle zaatar, then green onions. Crack black pepper and sprinkle sea salt, and lastly, drizzle olive oil over the top.
3. Bake for approximately 25 minutes or until cooked to your liking.
4. Transfer carefully to a large serving dish where guests can take as much as they please rather than breaking it up. It looks so beautiful as a whole piece! Serve with sauce on the side.
